The reason Mace Windu has one is that when Samuel L. Jackson was talking with Lucas, Lucas said that good guys have either blue or green, but Jackson was like “hey, we’ve got this huge battle scene, sometimes really pulled-back, I would be able to be able to point where I am, so what if I had, like, a purple lightsaber?” E Lucas disse “vamos ver”.”

Legends assigned different meaningings to a lot of different lightsaber colors, but those meanings seem to be gone now in the new canon, other than red = Sith and blue/green/purple = Jedi.
The Clone Wars has made yellow blades canon too, but only for the temple guardards. Ninguém mais parece tê-los.
